Banh Hoi in Nha Trang is another long-standing handicraft profession practiced by numerous families throughout the centuries. The banh hoi villages in Nha Trang continue to use traditional processes, such as choosing the rice, grinding the flour, completely kneading it, and pressing it into thin, delicate strands that are thinner than fresh vermicelli. These threads are braided into lovely, delicate sheets adorned with freshly minced chives. Everything is done by hand, with painstaking attention and skill.

Traditional French colonial-era bakeries were primarily handmade ovens made of brick or clay, similar to French bakeries but with modest modifications to fit local conditions. These ovens were generally powered by wood or charcoal, resulting in inconsistent baking temperatures when compared to current electric or gas ovens. To make Nha Trang rice paper that is both tasty and soft, bakers must go through a lengthy process of preparing materials that requires talent and experience. What distinguishes this trade is the painstaking handcrafting in every stage of production. From carefully selecting materials to combining the flour in the proper amounts, kneading and heating meticulously, and finally generating thin, crispy rice paper, everything demonstrates the bakers' attention and commitment.

The Art of Making Mats:

Mat weaving is a traditional Vietnamese craft with a history dating back 4-5 centuries. Vinh Thai commune in Nha Trang is the birthplace of this mat weaving technique, which has been practiced for over a century. The low-lying topography around the mouth of the Cai River, which flows into Nha Trang Bay, is perfect for cultivating sedge. At its heyday, the mat-weaving community had more than 500 homes. Vinh Thai mats were previously famous for their brilliantly dyed sedge fibers, dense weaving, and strong, appealing edging. Unlike other areas' mats, which are woven from white sedge and then printed with pictures, Vinh Thai mats are painstakingly dyed with four colors before weaving: red, blue, yellow, and purple, and mixed to be woven.

Pottery Craft:

Lu Cam pottery is approximately 200 years old and is located 4 kilometers from Nha Trang's city center.  Lu Cam pottery is produced from Vinh Thanh clay, which has wonderful reddish and pink hues. Despite its rough texture, it is quite durable, making it popular in Nha Trang and the neighboring areas. Before the construction of roads, pottery from Lu Cam was transported up the Cai River to Dien Khanh or out to the Cu Huan estuary for distribution to other locations. To honor their ancestors' efforts, the people dedicated a shrine to the patron saint of pottery. A document commemorating the patron saint of pottery was produced in 1874, and three Nguyen emperors gladly conferred titles on it in 1903, 1909, and 1924, respectively.

Traditional incense production in Khanh Hoa is a long-standing skill that is deeply ingrained in the local culture and religion. This skill is focused on the Vinh Thanh and Dien Khanh regions and is made with natural substances such as cinnamon powder, agarwood, and different herbs. To make incense, pick items such as five-spice Chinese medicine, cinnamon bark, cardamom, pine buds, cloves, star anise, eucalyptus, and cinnamon. Blend the ingredients with water to form a powder. The incense core is then manufactured by splitting mature bamboo pith into small, even pieces and sun-drying it for many days until it is dry and brittle. The incense powder is next rubbed around the core until thin and spherical, and finally sun-dried.

The craft of making conical hats in Phu Loc Tay village, Dien Khanh town, is famous throughout Central Vietnam with the brand "Thanh conical hats" ("Thanh" here refers to the ancient Dien Khanh citadel, abbreviated as "Thanh"). The conical hats are made from "Lụi" leaves, which are brought in, washed in sand, and then sun-dried until the green leaves turn a silvery white. The leaves are spread out to dry along the village dikes on sunny days. To create a complete hat, the hatmaker must be careful in every step, patient, and skillful with each stitch. A beautiful hat is one where the leaves are white, the stitches are smooth, and the stitches on each brim are perfectly even.

Calligraphers transmit their emotions and personalities with varying subtleties and intensities using major and secondary strokes, as well as the thickness and lightness of a brush.
